Week 4 Meal Of The Week

Slow Cooker BBQ Chicken w/Sauteed Mushrooms

(I know, I use the crock pot a lot)

 

ingredients

  • 5 to 6 boneless skinless chicken breasts thawed
  • 1 (18 oz ) bottle of Sweet Baby Ray’s BBQ sauce
  • 2 tablespoons vinegar
  • 1 tablespoon Worcestershire Sauce
  • 1/2 cup of brown sugar
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon garlic powder
  • 1/4 cup Italian Dressing

instructions

  1. Mix all ingredients together (except the chicken)
  2. Put chicken in the crock pot and pour sauce mixture over the top.
  3. With a large spoon, stir all together, coating chicken well.
  4. Cook on low for 4 to 6 hours, or until chicken is fall apart tender.

Sauteed Mushrooms


Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 cup chopped Portobello mushrooms
  •  2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon steak seasoning rub (optional)

Directions

  1. Heat butter and olive oil in a skillet over medium heat. Stir mushrooms in the oil and butter until well coated. Sprinkle oregano, garlic powder, and steak seasoning on mushrooms; stir to coat. Cook and stir mushrooms until lightly browned, about 5 minutes.

With bars still closed, I've been forced to "tailgate"/watch in the back yard. Big screen tv,  100 ft cat5 cable, cooler full of beers, hand sanitizer, and latex gloves for high-fiving. 

Games here are at 10:00, so I usually grill some wings for half time. My son was recently gifted some Weber's mustard for his birthday, so today we added some Chicago style hot dogs to the menu.

I picked up 2 bottle of Chevetas when I was home. You just reminded me that I have them still. I forgot all about them. Sounds like a plan for next week.

Love chilli. Its just a bit of a hassle to make. At least the good recipes. I realize there's quicker ones. But not the same.

The one I use is pretty quick. The thing with mine is I like it pretty spicy so that’s what I’ve mostly been working on with every batch to try to get it to where I like it. My buddy just gave me one for southwest chili and I think I might do that this weekend.

Good call! I think I'll make some this weekend. I don't have Chiavetta's but I have the original Cornell Chicken recipe which is what Chiavetta's is based on my understanding.
